This is a recipe that my grandma Frehner made for the family when we all got together. It's super simple, makes a lot of food and fills tummies. In 1965 my mom (Patrice Miller) went to visit her uncle Graeme Frehner and his family in California. After a fun afternoon on the beach they made this yummy taco salad they called Bachelor’s Delight. It has been a family favorite ever since. The perfect meal for large groups. Its very easy to make and so yummy!

This has been a favorite family recipe for years now. Grey, our youngest, saw that I was making these and asked for them to be made for his birthday this year (it’s in September, ha ha). He loves this eggy concoction. This is such a fun recipe. You can be creative with your ingredients. If you don't have bacon at home cut up lunch meat or add some sausage. If you like pepper jack cheese best use that in this recipe. We like to make this recipe in muffin tins but you can also us a casserole dish. Have fun cooking.

September is a BIG birthday month in our family, not only in our home but for our extended family as well. I love birthday’s because it is a really great excuse to have CAKE! I made this cake for my mom in January, and when Grey and I ate a piece, our eyes rolled back in our head. It is so darn good, hence the name. If you like chocolate cake you will love this recipe. It came from a cook book my Grandma Moutray gave me called “The Cake Mix Doctor” by Anne Byrn. It’s a good one to have on the shelf.
